Founded by Kimmie Spice, the Head Bitch in Charge, the goal of Biscuit Bitch, beyond preparing delicious breakfast and brunch food, in the forms of biscuits and gravy and biscuit sandwiches, for Seattle’s many locals and tourists, is to provide a bit of Southern charm. This location is much bigger than the chain’s other outposts in Belltown, Pioneer Square, and near Pike Place Market, including seating for 50 and more room on the grill to experiment. With locations in Belltown, Pioneer Square, and Pike Place Market, Biscuit Bitch Seattle is a true downtown Seattle mainstay. The new kitchen will have enough room for the chain to experiment with new menu items. Though the three current outposts already have some vegetarian and gluten free options, the new location may also add some more vegetarian items that had dropped off the menu in the past, such as collard greens and black eyed pea hummus.
